These were incredible. The first time I made these I didn't have any peanut butter chips so I used 1 cup of peanut butter and softened it in the microwave before mixing it into the condensed milk.
I then dumped all ingredients in a 9x13 dish, mixed it with a spatula and then pressed it down. AMAZING! The next time I used the pb chips and was a bit disappointed. USE PEANUT BUTTER INSTEAD . . . so much better.
CHOCOLATE CHIP COOKIE CHEESECAKE BARS
2⅛ cups flour
½ teaspoon salt
½ teaspoon baking soda
12 tablespoons butter (1½ sticks), melted and cooled slightly
1 cup light brown sugar
½ cup sugar
1 large egg
1 large egg yolk
2 teaspoons vanilla extract
2 cups milk chocolate chips (divided)
For the cheesecake layer:
8 ounces cream cheese, softened
¼ cup sour cream
¼ cup powdered sugar
2 teaspoons clear vanilla extract
Preheat the oven to 325 degrees. Spray a 9X13-inch baking pan with cooking spray then line with parchment paper.
Mix the flour, salt, and baking soda together in medium bowl then set aside.
