I used chickpeas instead of Black beans, added salt, an egg, and a teaspoon of vanilla, including all other ingredients, except regular cocoa powder and semisweet choc chips (nothing vegan). Blended all together and folded in choc chips. So delish!!!
1 (15 oz) can of black beans, rinsed and drained
2 eggs or flax eggs (add an additional egg if you like cakier brownies!)
1/2 of a large ripe avocado
1 tablespoon melted coconut oil
1/2 cup unsweetened cocoa powder plus 1 tablespoon
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoons pure vanilla extract
2/3 cup coconut sugar or sub brown sugar (or sub 1/2 cup pure maple syrup)
1/3 cup chocolate chips + 2 tablespoons for topping
Preheat oven to 350 degrees F. Grease a 8x8 inch baking pan.
Place all ingredients besides chocolate chips into blender or food processor.
